This super easy recipe is perfect for those nights when you feel like desert but really can't be bothered to make anything complicated. It only takes one saucepan, has minimal ingredients and is complete within 5-10 minutes.
It is perfect by itself, with fresh coulis or as a filling for tarts!
Perfect for Coeliacs and for those with lactose/dairy intolerances.
Makes 4 serves
Ingredients:
Milk- Half a litre. (I used lactose free but you could use soy, almond, full cream, whatever suits you!)
Vanilla- 2 tbsp (you could add cocoa if you wanted chocolate custard)
Sugar- 2 tbsp
Cornflower- 2-3 tbsp
Egg yolks- 2
Method:
Whisk the milk, vanilla, sugar, cornflower and egg yolks into a saucepan until combined.
Place over medium heat and continue to whisk until it begins to boil and thicken.
Allow it to boil for a few minutes to ensure it is cooked before taking off the stove and serving into bowls.
