Gourmet Veggie Burgers made completely gluten and dairy free!
(This recipe uses homemade white bean flour but this can be easily substituted for additional gluten free flour if not accessible.)
These gourmet burgers are a fantastic healthy alternative! They could easily be made vegan by substituting the egg for an egg alternative.
INGREDIENTS
1 Zucchini, grated
3/4 cup finely diced red cabbage
1 onion, diced
5-6 cloves garlic, minced
the juice of one lemon
1 Carrot, grated
1 potato, grated
1/2 cup chopped mint
2 eggs
1 cup homemade white bean flour**
1/2 cup gluten free plain flour
plus water as required to combine- about 1-2 tbsp
Avocado Oil
METHOD:
Mix all ingredients (minus oil) together in bowl until combined.
Heat avocado oil in a pan. Shape and cook for about 5 minutes, depending on thickness of the burger, on each side or until done.
Enjoy!
** TO MAKE WHITE BEAN FLOUR:
Use the mill attachment on a kitchenaid stand mixer (or similar devise) to grind dried white kidney beans on fine setting to make flour.
